Dietary Iron

Are you getting enough iron in your diet? If you are a vegetarian you might have a deficiency.

I am a vegetarian and I checked my iron consumption today. I was surprised that I ingested exactly 100% of the RDA (which is 8 mg).

Here’s what I ate. Everything was organic. It amounted to 1,835 calories, but these are approximations. I am on a calorie restriction diet and trying to stay under 1,800 calories a day, so I was very close.

Nonfat milk - 175 calories - 0%
Light beer - 95 calories - 1%
Coconut cookies - 200 calories - 0%
Raw cashews - 275 calories - 25%
Lentil soup - 270 calories - 25%
Raw honey - 100 calories - 1%
Dark chocolate - 230 calories - 2%
Uncooked broccoli - 50 calories - 15%
Pasta sauce - 100 calories - 10%
Raw carrots - 40 calories - 5%
Gala apples - 150 calories - 6%
Red wine - 150 calories - 10%

Calories: 1,835
Iron: 100%

Consider checking your iron consumption. Most U.S. food labels indicate how much iron is in the food. You just need to add it up.

Workout Routine

I am starting this workout routine today. I am doing it daily for eight weeks and I intend on gaining muscle. I am restricting my diet to about 1,500 calories a day, so I lose a pound a week. I think If I succeed I may lose about 10 pounds due to fat loss and reduced water retention. I will take some before and after pictures.

Twitter and Instagram Deleted My Tweet



I tweeted this joke and got a 12 hour suspension on Twitter, so I posted it on Instagram and they did not like it either. They obviously can't take a joke. It was not my best joke, but I thought it was pretty funny. It was about Jeffrey Toobin and Peter Strzok. If you have not heard of them, then you may need to research them to understand the joke.

Instagram did not suspend my account, but I requested a review anyway and I will post their response.

Spanish Vocabulary Words

Do you know how to speak Spanish? What's your second language?

Spanish is my second language and I have some proficiency, but I need to keep increasing my vocabulary and refreshing my memory. I took Spanish language classes in middle school, high school and university. I enjoyed them and did well, then I used it in Mexico on trips to Tijuana, Ensenada, Rosarito, La Paz, etc.

They say if you can understand jokes in another language, then you understand it well.

Exercise and Diet Update - Week 1

This marks one week on my new diet and exercise routine and it has went well.

I got sore lifting dumbbells and it took 3-4 days to fully recover. I anticipated some soreness. I worked out all my major muscle groups in three days, then did abs, cardio, stretches and rested the other days.

My diet is working because it’s a calorie restriction diet and just requires determination. I think I have created a calorie deficit every day or nearly every day and I might have lost a pound (partially water retention).

I like adding calories in the food I eat. I’ve been adding their calcium and iron too lately. I started taking organic calcium supplements 2-3 weeks ago and organic collagen builder supplements 1-2 weeks ago. My organic vegetarian diet lacks those things, so they help my skin, bones, organs, etc.

I am going to add burpees, push ups and shrugs to my workouts soon. They will build and tone my muscles.

The first week was a success, but not by much. It was a shock and I am ready to create bigger calorie deficits this week and workout even harder.

Before too long I am going to fast one day. Fasting part of a day usually doesn’t make much sense because I just eat a full day’s worth of food later. However, a 1-day fast is a good way to see some results and it isn’t too difficult to do.

It is difficult to guess my weight, but I probably weigh about 160-165 pounds. I’ve been as much as 187 and as low as 153 pounds and even lower a couple of times. I think 140-145 might be my optimal weight now unless I put on lots of muscle. However, this 8 week diet is only designed to take me halfway there.

My body functions best when it’s very lean. I can stretch further, twist more and adjust my back better. I got very lean in 2012, so I remember.

I was an obese or overweight child because when I was 5’ 3” I was 153 pounds. My grandma was obese before she died and so was my mom. My dad is obese or overweight. I suppose it’s in the family, but I intend on being lean because I listen to my body and have discipline and it’s best for me.

How To Be Houseless (aka Homeless)

Some people never think about being houseless, then one day they lose their job and find themselves on the street. Here are some things to consider if you must be houseless.

1. Stay clean. Find somewhere to shower every day. Beaches, gyms and hotels have showers and so do your friends, family members and some churches, shelters and nonprofit organizations. If you have no other option you can do a sink shower or buy a camping shower.

2. Get a storage unit. Instead of living out of your car or keeping your belongings on the street you can get a storage unit for them. They cost as little as $50 a month for a 5’ x 5’ unit sometimes. Be prepared to give the company that you use an address because they will ask for one. Either rent a mailbox or give them the address of somebody you know. Some Post Offices offer free general delivery service (which is like a P.O. Box) for one month.

3. Leave everything like you find it. Bugs love trash and discarded food, but the cleaner you keep your sleep spot the better it will be because you’ll have fewer bugs and authorities will feel less inclined to make you move. Put stuff in zip-top bags.

4. Stay hydrated and know where restrooms are located. Some restrooms close early, but a few are open all night. Check cafes, grocery stores, parks, etc. and locate several of them, so you can use them later. If you use a private restroom don’t take too long and leave it like you find it, so they will let you use it again.

5. Make a budget. Know how much money you have, how much you get and how much you need.

6. Apply for food assistance. The government gives poor people a monthly food allowance, so you should be eligible for it.

7. Consider visiting a shelter or applying for low-income housing. Some houseless people prefer shelters for the safety and continuity especially in bad weather. Others prefer being alone because they don’t like the rules regarding curfew, drugs, pets, etc.

8. Find a sleep spot. Look for somewhere safe that’s off the ground and away from pollution. Know which way the wind blows and whether or not it will rain because then you’ll need a covered spot. Decide how, when and where you want to sleep and whether you will need a sleeping bag, a tent, a tarp, etc. or not.

9. Get a radio. Radios are cheap and you don’t need to charge them because they run on batteries. Some radios are even solar powered. It will be handy in case there is an emergency or you just want to hear the news or some music.

10. Consider getting a cheap cell phone. Some stores like Walmart or Dollar General sell burner phones or flip phones for $10-$20. You can add minutes to them for a few dollars and it’s always free to dial 9-1-1.

How to be a Strict Vegetarian

If you want to give up meat and try vegetarianism there are some things you should keep in mind especially if you stop eating dairy and become a strict vegetarian. With some effort you can get most of the nutrition you need with a vegetarian diet, but some things are either impossible or very difficult to obtain without supplements.

I discovered what was best by trial and error, but it confirmed what medical science says. Vitamin A, Vitamin B12, Vitamin D, calcium, iron and lysine are arguably the hardest vitamins, minerals and proteins to get.

You can get your RDA for Vitamin A with carrots, carrot juice or the most convenient way may be spirulina. Spirulina comes in capsules and tea and I drink a cup of spirulina tea every day. My collagen builder supplements have about half of my RDA for Vitamin A too.

There are trace amounts of Vitamin B12 in some foods, but I think the only way to get it is through supplementation. It comes partly from the ground and is synthesized in animals, but it can be made with bacteria too. I use an organic B12 spray each day. If you drink soy milk or oat milk it might be fortified with B12.

You can get enough Vitamin D through sunlight. If you don’t get enough sunlight you can eat mushrooms or take a supplement which is what I do. It is combined with my calcium supplement.

Calcium is an important mineral that needs other vitamins and minerals to work properly. It is difficult to get more than 25-50% of your RDA for calcium, so I recommend taking supplements. I take about 800mg of calcium supplements from algae and I eat at least 200mg of calcium each day. Some soy milk and oat milk is fortified with calcium and tofu is typically fortified too. Otherwise, try pinto beans, green beans or almonds (or all three). You'll need to eat a can of green beans, a can of pinto beans and seven tablespoons of almond butter (which is about 1,100 calories) to get 1000mg though.

Depending on your diet iron can be hard to get. Some foods like beans, lentils, cashews, pumpkin seeds and tofu have a lot of it. Honey and oils don’t have iron and most fruits have very little. 100 calories of wine or popcorn provides about 10% of your daily iron like 200 calories of sunflower seeds or 330 calories of walnuts.

Lysine is the hardest amino acid protein for vegetarians to get. I eat enough of it each day because 30-40% of the RDA is in several foods I eat. Oatmeal has a lot of lysine. I also get it through lentils, cashews, walnuts, almonds, pumpkin seeds, mangoes and bananas.

You may want to write everything you eat because you can make a list of what you ingest for a day or two to see if you normally eat what you need or not. Internet searches can provide all the nutritional information. I recommend getting at least 1/4 cup and a tablespoon to measure what you eat, so you don’t overeat. Good luck.

A Brand New World: The End

Have you enjoyed A Brand New World? It has been a labor of love and an exciting journey.

In 2013 on the streets of Long Beach, California I began writing short stories and posting them on my website. Little did I know I’d eventually publish 12 books of stories in nine years across the Hawaiian islands and the mainland!

I originally finished the series in 10 books and 500 stories on December 22, 2019. However, after the coronavirus hit Maui and I moved to Kauai to write a book of haikus at the end of March 2020, I self-quarantined for over three months and started writing The Addendum on April 5, 2020. There was too much going on to stay silent and I wanted to write the haikus outside. The Addendum was book #11 with 100 stories and I published it on September 21, 2021.

Toward the end of book #11 I started realizing that I needed to write one final book of 66 stories and call it Addendum #2. I am currently writing it and I’ve written 26 stories. I have story ideas for over a dozen of the remaining stories and I am going to finish them by June 21 and publish them on June 22, 2022.

Thanks for reading. I hope you enjoy the last 40 stories in the next 66 days. I doubt that I will continue the series, but I may write a spinoff book of stories or a novel tied to the stories. Anything is possible though.

How to Prepare a Hotel Room

What do you do right after you open your hotel room’s door? Here’s what I do.

1. Plug in an filter.

2. Wipe surfaces, handles, toilet seat and lid, phone, switches, hangers, remote control, drawers, etc. with alcohol or hydrogen peroxide wipes.

3. Lightly spray carpets with alcohol.

4. Unplug the refrigerator, microwave and air conditioner.

5. Unscrew their light bulbs and screw in bright and energy-efficient, 23 watt, LED bulbs.

6. Smell, test and taste the sink water to see if it is drinkable. If it isn’t drinkable, then filter it or find clean water.

7. Put one pound of baking soda in about eight zip top bags and spread them around the room.

8. Inspect the shower for mold and mildew.

9. Inspect the towels and bedding for cleanliness.

10. Replace their toilet paper with unbleached, recycled toilet paper.

11. Store their soap, coffee maker, cups, utensils, etc. in the closet and plug in a kettle and use organic soap.

12. Get a bucket of ice if necessary.

13. Put the Do Not Disturb sign on the door and call the front desk to tell them to avoid coming in the room.

14. Unpack, shower, make some tea and relax!

Fasting

Fasting is good for the body. It gives the organs a rest.

On Monday as I was preparing my food for the day, I realized that I should fast and I was excited about it, so I put the food away. The purpose of my fast wasn’t just deprivation, so I partook in my normal tea routine. I used vitamin sprays, but avoided calcium and collagen builder supplements.

I Dreamed Again

I dreamed that it was dark and I was inside standing in front of a sliding glass door with a screen. It may have been my father’s house because it looked that way.

The white curtain was stuck to the screen due to the draft. As I pulled back the curtain a little to find the handle and close the door I saw a white hand on the screen door from outside and it startled me. I jumped, yelled in surprise and woke up.

I Dreamed Another Dream

I dreamed that I was in a (flying?) car with somebody on the top of a mountain and I sat in the driver’s seat. A cat was on the hood and I drove off the cliff. The car splashed into a lake of water below and we were ok, but it was a long drop.

The next thing I remember I am indoors and a few people are nearby. I am trying to exit the building, but I stand by the door for a minute before I leave. A slightly overweight woman around 30 years old was sitting on the ground and she asked me to move because I was blocking her vision.

I was about to scold the woman for sitting down and cite her sitting as the reason she can’t see not me standing. However, before I made a comment I caught myself and considered that maybe she was immobile, so I bent over, looked her in the eyes and asked her if she needed anything. She was taken aback, but eventually said she needed her glasses (eyeglasses), so I told her I would get them for her.

A skinny man her age stood behind her in the doorway and was looking at me. After we made eye contact he said he learned how to play the stock market, so we made small talk for a minute and then I woke up.

This was the fourth dream that I had in four days.

Dream

* This is the 3rd dream I had in four consecutive days and it occurred on Sunday. I scribbled some notes after I woke up and remembered it, but because it was confusing I waited to write about it. This is the dream to the best of my recollection.

I had a strange dream that was a little disjointed and hard for me to remember.

Somebody hurt me and I was upset, so I kicked them in the face. I kicked them twice very quickly and they didn’t retaliate.

I took a taxi somewhere and I wanted them to return an hour later. Our car was rolling forward and about to hit a big, white truck which might have been a garbage truck and the truck absorbed it.

I saw my daughter Jordan and it was my turn to ride a big white horse, so I jumped on it. She tried to give me a little white pill, but I didn’t want it, so she cried.

I hope you’re well.

The final book in A Brand New World will be finished by August 30, 2022. This date coincides with the first story that I wrote in the series on August 30, 2012. I initially thought I’d finish it sooner, but I changed my mind.

There will be 66 stories in Addendum #2 and I’ve written 39 so far and you can read them online. After I finish the remaining 27 stories I will remove them and publish them in a book. It’ll be available in paperback, Kindle and hardback on Amazon.com by September 1, 2022.

I already have 16 story ideas and I will probably use most of them. They include stories about lasers, Apple, World War II and of course the alleged 2020 presidential election fraud.

I Recalled Another Dream

I dreamed that it was late Saturday night after the last Saturday Night Live of the season. Some people were acting a little strange and I felt like I was being watched and monitored or stalked. I saw Kate McKinnon in the store from the outside.

I needed to ride two buses to get back to where I was. I needed two buses because the route was going to end, so I was going to ride one until it ended, then presumably get back on it after a short break. However, I thought another bus might come to start the new route too.

A woman was talking on a cell phone around the corner of a cafe. It looked like the downtown Starbucks in Long Beach, California. She kept poking her head around the corner and saying things like she was waiting for the bus and watching me.

A bus eventually came and lots of people boarded. It was a yellow school bus. I entered and walked toward the back and all the seats were taken except for half a seat on a bench with a person. It wasn’t a full bench for some reason, but I sat on the edge of the seat anyway.

As I was riding I said, “Something doesn’t feel right.” I replied in my head and said, “Maybe it’s because it’s a school bus” instead of a city bus.

After I got off the bus I walked through an outdoor tennis court and when I got to the other side a woman on a phone yelled to me. I couldn’t quite hear her, but she waved her arms, so I walked over there.

Somebody thought they had my guitar strap. In real life I lost or misplaced my guitar strap and just realized it before I went to sleep. However, they didn’t have my guitar strap they had my belt. I was happy to get my belt and wondered where my strap was. A woman sitting on some bleachers handed it to me and it was rolled up and exactly like the belt I own in real life.

It looked like I was at a park in between Coral Gables and Coconut Grove, Florida called Douglas Park. In real life I used to sleep in Douglas Park in 2018 when I slept during the day instead of the night when I was homeless. I walked by the basketball courts when I used the portable bathroom.

Strange Dream

I dreamed that I was in the shower with a young girl and a little man. The girl had long brown hair and blue eyes and she was closest to the shower head. She looked like Rep. Nancy Mace. The man was behind her and in between us. He looked like a short Larry Nassar. I felt like I was there to keep an eye on them.

After a minute she looked back at me. I wondered if she liked his attention, but after she looked at me I realized she liked me.

The man slowly and creepily put his left hand on her naked back and it upset me. She barely flinched though. I was sitting on a small stool, so I stood and didn’t know what to say at first, but I shook my head and removed his hand, then I wanted him out of the shower.

I got out of the shower and entered the bathroom. I was only wearing a t-shirt and Busy Philipps opened the front door and walked in the bathroom. I wasn’t sure how she felt about me having no pants on, so I casually covered my genitals with a 6 x 9 card and she looked down as if she was trying to see my penis and grabbed my shoulders with both hands and gently shook me.

I couldn’t tell what she was thinking, but something was on her mind.

My New Diet and Regimen



Today I started a new diet and exercise regimen that should improve my health, burn fat, build muscle, simplify my life and save money.

Since I am an organic vegetarian and a strict one I have limited options, but I still have some great ones. Local stores like Whole Foods, Costco and Food Lion will have everything I need although I already have a week or two of everything.

I picked three essential foods that I will eat every day. They include organic oatmeal with organic honey and organic cinnamon, organic almond butter and either organic beans, organic tofu or organic lentils.

I’ll eat a cup of oatmeal which is 300 calories, but after 100 calories of honey it’s 400. I’ll eat four tablespoons of almond butter which is also 400 calories not to mention 40% of the potassium, 18% of the calcium and 60% of the iron I need each day.

I am going to pick from black beans, pinto beans, black lentils, etc. and eat 300-400 calories a day. I may go with the precooked varieties or I may buy dry beans and cook my own.

I want to consume about 1,600 calories a day to maintain a good calorie deficit. This means I only have to plan 400-500 calories a day from other foods. Today I picked organic pumpkin seeds, organic oranges and an organic grapefruit. In the future I may include organic noodles, organic cashews, organic sunflower seed butter, organic popcorn, organic walnuts, organic blueberries, etc.

Those foods should provide enough calcium, potassium, iron and lysine that I need in addition to other vitamins and minerals. I will still need to use my organic Vitamin C and B12 sprays though. I will also need to take my organic calcium supplements, organic collagen builder supplements and a cup of organic spirulina tea.

I will take my organic turmeric with organic black pepper and organic garlic supplements as well. They are nutritious and offer lots of health benefits. They will also ensure that I get plenty of nutrition.

Another great aspect of this diet is that 3/4 of it will only cost $3-$4 because oats, almond butter and beans/lentils/tofu are cheap even the organic ones. Relying on fewer foods reduces your chance of being sickened by food too because you trust fewer food manufacturers and sellers.

In addition to my diet I have a list of random things I want to do each day and lift weights is one of them. Even if it’s only a set or two I want to build muscles every day. Since I have 20-pound dumbbells it shouldn’t be too hard for 90 days, then I will reevaluate it.

I intend on fasting, but probably for one day at a time. I won’t create a huge calorie deficit each day, so I’ll need to stay disciplined. The food is fibrous and satiating, so I will probably feel full though.

Losing Faith in Supreme Court Justices

I’ve always respected judges and in particular the Supreme Court. I was taught that they were very special, knowledgeable people and were chosen by the president. It wasn’t until recently that I saw them differently and lost faith in the Supreme Court justices.

I think the way they overturned Roe v. Wade was agenda-driven and reckless. I think it was unnecessary and put a lot of lives in danger. They could have at least required a period of time to pass before going into effect, so people in states with trigger laws could keep their appointment.

It wasn’t fair to people that wanted an abortion, then suddenly couldn’t get one. Abortion was legal and accessible their entire lifetime and it was normal. If you want to make people suspicious of the government and lose trust in elected and appointed officials this is a great way to do it.

I don’t think anybody should have a say in another person’s healthcare. I support bodily autonomy and know that whatever is in someone’s body belongs to them. Each mother needs to decide what she wants to do with her fetus and she doesn’t need government overreach or societal pressure to do something that she doesn’t want to do.

It is a shame that people want to control pregnant women. I can’t imagine what it’d be like to be required to take on a 19-year responsibility all of the sudden when I had other plans.

It appears that every state allows for an abortion if the mother’s life is in danger. This is a good start, but I am reading stories about doctors having to wait until their life is in danger before performing an abortion now even if they know it’ll be necessary.

There just aren’t any good reasons for controlling a pregnant mother and nobody has the right to do so. People should respect their own body and the bodily autonomy of others. Men should also do what they can to make abortion a non-issue because every man could use birth control to prevent unwanted pregnancies.

I don’t think SCOTUS cares about public health. If they did they wouldn’t have done this in this way. I also don’t think SCOTUS cares about pollution causing climate change, but that’s for another blog.

Spicy Pintos Recipe

Spicy Pintos Recipe


This is a recipe for cooking savory, spicy pinto beans in a pressure cooker. You can eat them on their own or fill a tortilla with them.

Ingredients*

Filtered water
1.5 cups of dry pinto beans
Garlic powder
Chili powder
Cayenne powder
Himalayan pink salt
Black pepper


Hardware

Pressure cooker
Spoon
Bowl


Directions

Step 1

Soak pintos for 8 hours. This will improve their texture and digestibility and drastically decrease cooking time. Fill pot with water a few inches above the beans and set a timer.

Step 2

Discard the excess water and rinse the beans.

Step 3

Refill the pot with water a few inches above the beans. Add a tablespoon of salt to the water and secure the pressure cooker’s lid. Turn the stove on high.

Step 4

After the pressure cooker is fully steaming cook the beans for 5 minutes, then remove the pot from heat, but leave the lid on. They’ll continue cooking while the pressure returns to normal which takes about 10 minutes.

Step 5

Discard the excess water. Put beans in a bowl and add seasonings. Makes 3 cups of beans (2-3 servings) which is about 735 calories.

After an 8 hour soak, the entire cooking process takes less than an hour (about 45 minutes). This includes pressurization while it heats, cooking time, depressurization and cooling time.

Organic Diet Update

I started a new diet this week and it has went very well.

The purpose of my diet is to:

1. Create a daily calorie deficit
2. Eat the important vitamins and minerals
3. Eat the same things every day
4. Eat only organic food

I am under the impression that I might not need a wide variety of foods. As long as I get all of the nutrition I need I should be fine.

These are the foods that I am eating each day. They amount to around 1400-1500 calories.

Oatmeal
Cinnamon
Honey
Almond butter
Beans or lentils
Garlic powder
Chili powder
Black pepper
Pink salt
Turmeric powder
Vitamin C spray
Vitamin B12 spray
Calcium supplements
Collagen builder supplements

I’ll also drink plenty of water and tea. I’ll have these teas daily:

Gunpowder green
Matcha
Rooibos
Peppermint
Hibiscus
Turmeric

I burn around 2,000 calories a day, so if I lose 500 calories a day I should lose a pound of fat a week.

I’ve had plenty of energy lately. I don’t eat anything for an hour or two after I get up, but I hydrate, so that helps.

I break up four tablespoons of almond butter into two servings of 2 tablespoons. I consume a heaping tablespoon of honey with a cup of oatmeal and I have another one with a cup of tea. In fact, I’ve found that it’s a good snack that staves off hunger until my next meal.

I eat a cup and a half of beans or lentils. With the seasonings it’s about 400 calories. The oatmeal, honey and cinnamon is about 400 calories too. Those are my main meals and the almond butter is more like a snack, so it’s like I get two small meals and two snacks a day. It’s perfect and gives me plenty of energy too.

Ketosis is good for you and burning fat for fuel gives you lots of energy, so I don’t anticipate feeling lethargic. I’ve been exercising and stretching as well.

Since I am an organic vegetarian I’ve a limited number of food options especially if I want to eat healthy. It can get very expensive too. However, this particular diet is extraordinarily healthy and very inexpensive too. All things considered - food, supplements, teas, etc. - I spend around $8 a day.

I chose almond butter because almonds are high in calcium and have some potassium. It’s seemingly impossible to get enough organic vegetarian calcium without supplements, but four tablespoons of almond butter provides almost 20% of the RDA.

I’ve wanted to write a book on fasting for several years, but I’ve also wanted to incorporate organic food and dieting too. I think this new diet will contribute to the final chapters in the book and I’ll start writing it this year.

I am hoping to find the “perfect diet” for me, so I can thrive. It might even be the perfect diet for others too. I don’t anticipate having to tweak it very much, but I’ve been planning to add 100 calories of either coconut oil, banana or red wine at some point. Perhaps I’ll introduce these things after the first month.

Two New Books

Do you like haikus?

I started appreciating writing three lines of 5, 7 and 5 syllables in Hawaii. As I moved across the islands I wrote four books in four, consecutive years on four islands.

This month I published two haikus books and they’re on Amazon. One Summer in Virginia is my 6th haikus book and it has 100 haikus that I wrote this summer on many topics. It’s in paperback and Kindle.

Haiku Poetry: 6 Books is my complete collection of 634 original haikus that I wrote between 2018-2022. It’s in paperback, Kindle and hardcover. I added six bonus haikus to it, so there are 640.

Now I am writing a book of general poems, but I intend on writing more haikus. I am also writing another book of original quotations and the final stories in A Brand New World for the last book.

Dialing in My Diet



I’ve been on my new diet for three weeks and it has went well.

One thing I noticed was that I needed to boil water longer to cook oatmeal. You can eat it raw, but it tastes better if it’s cooked or semi-cooked. It’s important to let it stand 5-10 minutes too (and always add a dash of salt).

I discovered that I was accidentally eating too much almond butter, but still creating a big calorie deficit each day. It took 10 tablespoons to eat the container (532 calories a day), but it was supposed to take 14 tablespoons which is what happens when you use heaping tablespoons.

I’ve been keeping track of calories, cost, supplements, vitamins, etc. in a spreadsheet and it has been helpful. I’ve expanded it several times too. Now I can easily see what I am eating and its value and totals.

I found that if I cook 1.5 cups of beans or lentils it makes 3 cups which feeds me for two days. In fact, I use slightly less than 1.5 cups because it makes a little more than double.

Each day I’ve gotten into the habit of using garlic and turmeric powder on the beans or lentils and making vegetable glycerin gel caps with the powder. I usually take the turmeric ones with turmeric tea too.

I think I’ve lost 3-4 pounds which is based on math and how I look and feel because I don’t have a scale. I burn about 2,150 calories a day and I eat about 1600-1700 calories, so I create a 500 calorie deficit. This means it takes 7 days to burn 3500 calories or a pound of fat.

About 25% of my daily calcium comes from almond butter. I get almost 40% from almond butter and beans or lentils. This realization caused me to reduce my calcium supplements from three to two. I get plenty that way and I don’t smell like them like I did before.

I reduced my collagen builder supplements from two to one a day. I don’t need its Vitamin A because I drink spirulina tea. I also added 5,000 IUs of D3 each day because I was deficient.

I just replenished my cinnamon because I’ve been using two tablespoons in oatmeal and one in rooibos tea. I also put about two tablespoons of garlic in beans or lentils and one in gel caps like I was saying.

I fasted two weeks ago for one day and it went well. I am going to fast again this Saturday and it should go well too. I’ve been able to stick to my diet before and afterwards.

If I replaced almonds with anything except calcium-infused soy/tofu I’d need to take one more calcium supplement each day. Sunflower seeds and cashews are delicious and high in iron, but low in calcium like almost all fruits and vegetables.

I don’t have any other food, so I can’t cheat on my diet very easily. I think this will make it easier to succeed. In a weak moment I’ll still stop myself before making oatmeal or beans/lentils. I just have to make sure I don’t eat too much almond butter, but so far so good.

I wasn’t eating lots of garlic and turmeric daily with my old diet because I didn’t always eat something that needed it or make gel caps, but now I do both daily. Also, 100% of my bowel movements have been solid and regular. Before this diet about 75% of them were this way.

I don’t intend on making many more changes. I just want to keep doing this for weeks and months. Eventually I’ll need to reduce my calories to lose fat because a 150 pound person burns 150 fewer calories than a 170 pound person, but I’ll cross that bridge when I come to it.

I just finished writing a haikus book, so I may have time to start writing my second diet book now. It’ll include info about fasting too. After more success with this diet I can see myself writing that book like I wrote Do the Math Diet in 2012.

5 Minute Healthy, Spicy and Savory Beans Recipe





If you want a delicious, nutritious meal, then look no further. Not only are beans and lentils full of protein and fiber, but they’re also a great conduit for nutritious herbs, roots and spices.

I’ve tried this recipe with pintos, black beans, green lentils and red lentils as shown above. The only difference is you don’t need to soak lentils for 8 hours. Just cook them.

Whether you cook beans or lentils it takes 5 minutes in a pressure cooker. If you don’t have a pressure cooker get one because it’ll save you a lot of time and money.

1. Put 1.5 cups of beans in your pressure cooker (or a pot). It will make 3 cups of cooked beans which is two large servings. You can double, triple or quadruple this recipe.
2. Pour filtered water into the cooker a few inches above the line of beans. Set an alarm to go off in 8 hours. Add a teaspoon of pink salt to the soak water.
3. 8 hours later dump the excess water and rinse the beans twice before refilling the cooker. Pour filtered water into it until it’s a couple of inches above the beans.
4. Close the pressure cooker’s lid and turn the range on high. In approximately 10 minutes the cooker will begin steaming and quietly whistling.
5. Once it’s fully steaming set your timer for 5 minutes.
6. After 5 minutes remove it from heat and turn off the range. It’ll keep cooking with residual heat for about 10 more minutes.
7. Open the lid and carefully pour out the water.
8. Scoop 1.5 cups of beans into a bowl and season* with garlic powder, chili powder, turmeric powder, cayenne, black pepper and pink salt. Stir and let cool 5 minutes and enjoy a la carte, as part of a meal or in tacos or burritos.
9. Store the remaining 1.5 cups in a container. Eat within 24 hours unless you refrigerate it.

* Season to taste. I just eyeball it, but I use approximately 2 tablespoons of garlic, 1 tablespoon of chili powder, 1 teaspoon of turmeric, a small dash or two of cayenne, about 1/8 teaspoon of freshly ground black pepper and a generous helping of pink salt; perhaps 1/8 teaspoon.

Use organic ingredients like I do for best results.

Organic Vegetarian Diet Update



The first month of my diet went well. This is an update.

I was able to eat the same exact things for over three weeks, then I ran out of oatmeal on September 23. I ate more almond butter and fasted on September 24, then I bought more oatmeal.

I think I am losing about a pound a week. I’ve been doing this by creating a calorie deficit. It was difficult at first, but it became easier. Now I spread my snacks and meals throughout the day sandwiched in between copious amounts of water and tea.

I considered adding 100 calories of coconut oil, walnuts or red wine to my diet. I just drank one bottle of wine by spreading it out over seven days. I also started eating three walnuts each day. I pulled coconut oil a few days ago for optimal mouth health and today I added it to my diet.

I think my Vitamin D deficiency might have started when I was sleeping days and staying up all night in Hawaii. I wasn’t eating any food or supplements with Vitamin D or getting it from the sun. However, now my calcium supplement has Vitamin D and I’ve been taking D3 supplements (5,000 IUs to 3,000 IUs a day).

My bowel movements look like they could win an award. In the past I accepted some loose bowel movements, but I think they indicated a lack of absorption which means my body didn’t turn the food into energy. Now I always use it all for fuel.

My appearance has improved because last year I was pale and white, but now I have color in my skin again. I feel good too, so I’ve been lifting weights, stretching, walking and doing yoga. In a way eating properly is like being on steroids even though my food is steroid-free. I think a great diet gives me the best chance to maintain and build muscles.

Last week, I paid a little more for organic black beans and organic oatmeal, but I think I still spend under $10 a day on food, supplements and teas. I also bought red lentils and cooked them for the first time. They were tasty and turned out well, so I blogged my recipe.

I wouldn’t do this diet without supplements because I’d encounter deficiencies and other issues. I take B12 because I don’t eat meat, C because I don’t eat fruit, calcium because I don’t eat dairy and D3 because I don’t always get enough sunlight. The B12, C and D3 are sprays and the calcium is a tablet and they’re organic.

If I see as much progress in October as September, I’ll be satisfied. Even though it takes time maintaining a lean and healthy body has lots of health benefits like improved healthspan and increased lifespan, so it’s worth it.

Organic Vegetarian Diet Update



This is an update on the diet I started on August 31, 2022. It has been going well.

Before my diet I occasionally drank organic fruit and vegetable drinks at 7-11 because they’re high in fiber and protein. I figured it wouldn’t hurt to drink a couple of them during a very strenuous day, but I had a partially loose stool the next day, so I won’t drink them again.

I think a diet like mine enables me to try certain foods to see how they affect me. Since I keep my diet steady every day I am able to see and feel what something else does to my system pretty easily.

I’ve been adding organic powdered cardamom to some teas like Ashwagandha which I recently started drinking as well. It’s great. I brew two big cups of Ashwagandha tea because it’s an adaptogen, makes me feel well and is unique.

Whole Foods sells freshly ground almond butter, so I bought some and it was tasty. In fact, you can grind your own, so I do that. It was $15.99 opposed to $11.99 in a prepackaged jar per pound. It’s high in calcium, protein, potassium and healthy fat.

Some wounds inside and out that have been healing. This is in part because of my diet and supplements. I’ve been eating the right amounts of vitamins and minerals and avoiding unhealthy foods. Manuka honey

The food that I eat combined with my supplements provides a wide range of vital nutrients. Even if I wanted to I couldn’t substitute much and still get proper nutrition that day. However, I researched cashews and it may be possible to substitute beans or lentils with cashews or cashew butter. I’d probably eat one more calcium supplement a day though. It has similar protein and fiber content and black tea could help replace some of the potassium.

I recently added organic extra virgin olive oil to my diet. Each day I drink 3/4 tablespoon because it has all sorts of health benefits.

The next things that I will likely add to my diet are organic Mushroom tea and organic black tea (maybe Earl grey).

I think I’ve been losing about a pound a week. My body is shrinking and I am feeling stronger and lighter on my feet. I just bought two Large/X-Large robes and a Small jacket, so go figure. I’ll start taking some pics and videos of my progress in a few weeks after I make more progress.

When I was in jail for four days with bogus criminal charges (which have been expunged) for growing medical cannabis for California patients my in-laws (more like outlaws) broke in my house and stole my computer and more. When I was 18 years old I started voting for president of the United States. That’s the earliest age that you can vote.

Now I’ve voted in California and Hawaii for eight presidents and two of them won. I’ve voted for Independents (Ron Paul is independent even though he ran as a Republican), Republicans and the Green Party. I’ll vote again in 2024, but I haven’t decided who I’ll vote for yet.

Organic Vegetarian Diet Update





Am I the only one that diets around the holidays? It seems that way anyway. This time what I am doing is more of a lifestyle change than a diet though.

My organic vegetarian diet is going well with organic supplements and teas. I want to keep it simple and get all of the best nutrition that I need. I also want to keep the price down which I do. When you factor in good health it’s a win-win-win-win.

I used to be deficient in some important vitamins and minerals and as I acquired more wounds they were healing too slowly, so I added supplements and here I am. As you can see in the graphic above it costs around $10 a day for the best organic vegetarian food and organic supplements that I can buy not to mention organic tea.

I’ve been creating a calorie deficit while I’ve been eating the best possible diet, so I can lose some fat. I’ve been losing almost a pound a week, so I’ve probably lost about 10 pounds.

I think I figured out why I feel a boost from spirulina. It is one of the few vegetarian foods that’s a complete protein, so I probably feel balanced nutrition. It’s fine to combine foods throughout the day for all the essential amino acid proteins, but it feels a little different (sort of like eating meat) when you eat all of them at once.

I added organic wine, but only a glass a day and I take a day off between bottles. It’s mostly good for you and it’s probably not too bad. However, I may limit myself to 2-3 more bottles until the end of the year. Even though it has good things in it it’s also a toxin.

I like to celebrate after my last meal. It isn’t a time to be sad that I can’t eat any more food. I succeeded in eating the right amount and I don’t have to think about it again until tomorrow.

Over the last month I added an extra ~100 calorie serving or two of organic walnuts sometimes. I am avoiding them for a few days right now though. They are a great snack and I much rather eat them than something less healthy.

In a few weeks I intend on eating 1,300 calories of lentils or beans daily instead of 400 plus oatmeal and almond butter. I want to see how my system likes it because I will likely get all the nutrition I need from eating 5-6 cups of beans or lentils. I’ll increase my consumption of organic extra virgin olive oil to make up for lost almond oil.

I’ve been wanting to fast, but I probably won’t fast again until December. I am good at eating the right amount each day right now.

Organic cardamom has been great with turmeric tea and matcha and ashwagandha tea. It livens it up even better than a dash of salt.

I can tell that I am losing weight because my body looks leaner all over. I think I have a higher metabolism than charts with height and weight calculations for calories burned. My wingspan is five inches longer than my height and some of my organs are likely oversized for my height because I was supposed to be taller, so I may burn 200 calories more a day than charts say.

I’ve been lifting weights, walking, stretching and practicing yoga. I’ve also taken a bath or two. I want to build muscle and keep my cardiovascular system in shape, so I want to do more of the same through the end of the year.

On Friday a pound of organic Yerba mate arrives, so that’ll be a welcome addition to my tea routine. I am running out of organic oregano, so more organic oregano is arriving too. Watkins brand sold me great organic garlic, so I wanted to try their oregano too.




I started drinking a cup of organic mushroom tea every day a week or two ago and it has been good. A similar organic mushroom blend is arriving Friday. I like the taste of mushrooms and it’s a good adaptogen.

Lastly, I used to drink a lot of coffee, so I gave it up last year. However, I am going to add a small amount back into my daily diet soon. 4 ounces of organic cold brew concentrate should do it, but we'll see. I think the acrylamide that I am trying to avoid will be minimal.

I accidentally left almond butter, wine and walnuts in direct sight and I think it made me eat extra walnuts. Since I removed everything from view those urges have been easier to overcome.

New Poetry Books

My next book of general poetry will be published in the first half of January. It’ll probably have 45-50 poems written between mid-July and mid-January.

I haven’t chosen a name for this book yet, but it won’t be untitled. All of the poems will likely be written in Virginia. Most of them have been uploaded to my website, but a few others will be added to the book before publishing. It’ll be on Amazon.com in Kindle, paperback and hardcover.

My 30th published book of poetry will include poems about life, learning, suffering, seasons and other issues I encounter. I am also writing my 8th book of haikus and it’ll probably be published mid-2023.

I intend on publishing A Brand New World: Addendum #2 by the end of the year or possibly on January 1, 2023. The 12th book will include the final 66 stories in the series. I’ve already written 56 of them and they’re on my website.

I updated my Catalog with the current number of books, poems, haikus and stories that I’ve written in addition to the book titles. I’ve also listed the books that are in progress.

Another Organic Diet Update

Good news. My clothes are fitting well and I need my belt again. I don’t have a scale, but I am probably around 150-160 pounds.

My body has been colder due to less fat, so I bought a hot water bag. Now I boil water and put it in the bag and it stays warm for hours.

My coffee experiment worked well. I drink about four ounces of cold brew concentrate each day. It wakes me up well in the morning. I think it has the least acrylamide and is worth the risk because of the antioxidants and caffeine boost.

I started drinking Yerba mate tea and it’s different, but good. I first drank it on the Big Island because it was the only organic option at the convenience store in Hilo when I was on my bike. It was sweetened though. I drink it unsweetened or with some honey.

I am thinking about blogging about tea brewing. I drink an assortment of teas each day and I brew them various ways. I imagine some people will find it useful and interesting.

I’ve been on this organic diet since August 31 and I’ve only altered it slightly on three days. Otherwise, I’ve been eating the same things each day and mainly almond butter, oatmeal and beans or lentils.

I ran out of walnuts and started eating a little more beans or lentils. My bowel movements got bigger and I typically have two award winners in the morning now. Before I began this diet I had some loose stools, but no more, so I must be fully absorbing everything I eat.

A week or two ago I substituted pistachios for oatmeal and honey and one of my two almond butter meals. Since I also walked a mile I think it was a wash, similar nutrition-wise and my body didn’t mind them.

I had a calcium deficiency that was worsening over time, so I changed my diet this year and started taking three calcium supplements daily. I eventually went to two a day and today I went down to one a day.

With two supplements I was eating about 1,400 mg of calcium a day even though the RDA for a man my age is 1,000 mg. Each supplement is 267 mg, so I still get about 1,150 mg a day now. I take it with my oatmeal because it has almost no calcium. Since there’s a lot of calcium in hibiscus tea and I am close to the RDA with my food intake, I may add a 3rd cup of hibiscus tea and stop supplementing in the future.

I reduced my collagen builder to one a day and I’ll stop taking it next month. I was mainly taking it for Vitamin A, but I started drinking spirulina tea and getting plenty of it.

Everything I eat and drink is organic, but it can be hard to find or expensive, so I look for the best deals. I’ve been thinking about replacing beans or lentils with cashew butter and it was on sale for about $8 a pound, so I ordered it. I may swap beans/lentils with cashews for a few days or a week. I haven’t compared every vitamin and mineral, but I think they’re comparable in some ways. Cashew butter will definitely be quicker and easier to prepare though!

Pressure Cooker and Hot Plate



Ever use a pressure cooker? I bought one this year and started cooking beans and lentils in it. I cooked popcorn in it once, but it didn’t work very well.

I don’t use a frig because I don’t eat anything that needs to be refrigerated, but I like making two days of beans or lentils at a time, so I keep leftovers in the pressure cooker. Since it seals it may work like Tupperware. It keeps food in edible condition for at least 24 hours.

I started cooking with it on a flat glass range, but moved and a couple of months ago I bought a hot plate and I’ve been cooking with it. It works very well and after the cooker gets to full steam it only takes five minutes on High to cook beans or lentils. Pintos take seven minutes if you like them squishy.

I ate leftovers cold until this week. I figured I might as well kick on the burner since the cooker always sits on it anyway. Heat also melts coconut oil which tastes great with beans and lentils.

I rushed into vegetarianism in 2012 and ended up acquiring some deficiencies because of my incomplete diet, but I think I’ve dialed in a healthy, organic, vegetarian diet now. Visit jasongastrich.com/blog to see my diet updates over the last 3-4 months.

I eat three primary foods now (almonds, oatmeal and legumes) with calcium, Vitamin C, Vitamin B-12 and Vitamin D3 supplements, plus several teas like spirulina and hibiscus not to mention cinnamon, honey and extra virgin olive oil. It’s all organic and I think I get proper nutrition now without deficiencies.
